Crust Ingredients

  • 2 1/2 cups All-purpose flour
  • 1/2 teaspoon Salt
  • 1 cup Cold unsalted butter cut into cubes
  • 1/2 cup Ice water approximately

Filling Ingredients

  • 6 medium Granny Smith apples peeled, cored, and sliced
  • 3/4 cup Granulated sugar
  • 1/4 cup Brown sugar packed
  • 2 teaspoons Ground cinnamon
  • 1/2 teaspoon Allspice
  • 2 tablespoons Cornstarch

  • Make the pie crust: Whisk together flour and salt. Cut in cold butter using a pastry blender or your fingers until mixture resembles coarse crumbs.
  • Gradually add ice water, mixing until dough just comes together. Form into a disc, wrap in plastic wrap, and chill for at least 30 minutes.
  • Preheat oven to 375°F (190°C).
  • On a lightly floured surface, roll out half the dough into a 12-inch circle. Transfer to a 9-inch pie plate.
  • In a large bowl, combine sliced apples, granulated sugar, brown sugar, cinnamon, allspice, and cornstarch. Toss to coat.
  • Pour apple mixture into the pie crust.
  • Roll out the remaining dough and either place it over the filling or cut into strips for a lattice top. Crimp edges to seal.
  • Bake for 45-50 minutes, or until crust is golden brown and filling is bubbly. Let cool completely before serving.

Notes

For a richer flavor, use a combination of apples like Granny Smith, Honeycrisp, and Braeburn. You can also add a tablespoon of lemon juice to the filling to prevent browning.
