Crust Ingredients

  • 1 1/2 cups All-purpose flour
  • 1/2 cup Granulated sugar
  • 1/4 teaspoon Salt
  • 1 cup Cold unsalted butter Cut into cubes

Filling Ingredients

  • 2 cups Tart cherries Pitted
  • 2 tablespoons Cornstarch
  • 1 tablespoon Lemon juice
  • 1/2 cup Granulated sugar
  • 1 Egg Lightly beaten

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, combine flour, 1/2 cup sugar, and salt. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  • Press the dough into the prepared baking pan. Bake for 15 minutes.
  • Meanwhile, in a separate bowl, combine cherries, cornstarch, lemon juice, 1/2 cup sugar, and beaten egg. Mix well.
  • Pour the cherry filling over the partially baked crust.
  • Bake for another 15-20 minutes, or until the filling is bubbly and the crust is golden brown.
  • Let cool completely before cutting into bars.

Notes

For a richer flavor, use brown sugar instead of granulated sugar. You can also add a sprinkle of cinnamon to the filling.
