- Step 1: In a large mixing bowl, combine creamy peanut butter and softened unsalted butter. Use a spatula to mix until smooth and well-blended.
- Step 2: Gradually add powdered sugar and graham cracker crumbs to the peanut butter mixture. Stir until fully incorporated.
- Step 3: Press the peanut butter mixture evenly into a greased 9x13 inch baking dish.
- Step 4: In a microwave-safe bowl, combine semi-sweet chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring until melted and smooth.
- Step 5: Pour the melted chocolate over the peanut butter layer and spread evenly with a spatula.
- Step 6: Chill the baking dish in the refrigerator for at least 2 hours, or until the chocolate is set.
- Step 7: Cut into squares and serve immediately, or store leftovers in an airtight container in the refrigerator.
Notes
When chilled, Buckeye Bars can last about a week in an airtight container. They can also be frozen for longer storage.
