Buckeye Bars are a deliciously decadent treat that combines creamy peanut butter and chocolate, inspired by the popular Buckeye candy. They are easy to make and served in a convenient bar form.

Ingredients
  

For the Peanut Butter Base
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 2 cups graham cracker crumbs
For the Chocolate Layer
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp vegetable oil

Method
 

  1. Step 1: In a large mixing bowl, combine creamy peanut butter and softened unsalted butter. Use a spatula to mix until smooth and well-blended.
  2. Step 2: Gradually add powdered sugar and graham cracker crumbs to the peanut butter mixture. Stir until fully incorporated.
  3. Step 3: Press the peanut butter mixture evenly into a greased 9x13 inch baking dish.
  4. Step 4: In a microwave-safe bowl, combine semi-sweet chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring until melted and smooth.
  5. Step 5: Pour the melted chocolate over the peanut butter layer and spread evenly with a spatula.
  6. Step 6: Chill the baking dish in the refrigerator for at least 2 hours, or until the chocolate is set.
  7. Step 7: Cut into squares and serve immediately, or store leftovers in an airtight container in the refrigerator.

Notes

When chilled, Buckeye Bars can last about a week in an airtight container. They can also be frozen for longer storage.
