- Step 1: Preheat the oven to 375°F (190°C).
- Step 2: Cook the orzo according to package instructions. Drain and set aside.
- Step 3: In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook for about 15-20 minutes until caramelized and golden brown.
- Step 4: Add minced garlic and thyme to the skillet. Cook for an additional 2 minutes, seasoning with salt and pepper to taste.
- Step 5: In a large mixing bowl, combine the cooked orzo, caramelized onion mixture, vegetable broth, heavy cream, Gruyère cheese, and half of the Parmesan cheese. Mix well.
- Step 6: Transfer the mixture to a greased baking dish, top with remaining Parmesan cheese, and bake for 25-30 minutes until golden and bubbly.
- Step 7: Let cool slightly, then garnish with chopped fresh parsley before serving.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat gently in the oven or microwave.
