  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 2 large onions thinly sliced
  • 2 cloves garlic minced
  • 1 tsp thyme leaves
  • Salt and pepper to taste
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup Gruyère cheese grated
  • 1/2 cup Parmesan cheese grated
For garnish

Method
 

  1. Step 1: Preheat the oven to 375°F (190°C).
  2. Step 2: Cook the orzo according to package instructions. Drain and set aside.
  3. Step 3: In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook for about 15-20 minutes until caramelized and golden brown.
  4. Step 4: Add minced garlic and thyme to the skillet. Cook for an additional 2 minutes, seasoning with salt and pepper to taste.
