  • 1 1/2 cups Granulated Sugar
  • 2 Large Eggs
  • 2 teaspoons Vanilla Extract
  • 3 cups All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 cup Unsweetened Cocoa Powder
  • 1/4 cup Coarse Sugar optional, for sprinkling

Method
 

Instructions
  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream together the softened butter and granulated sugar in a large bowl until light and fluffy. Use an electric mixer for best results.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a medium bowl, whisk together the flour, baking powder, salt, and cocoa powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  7. Sprinkle the tops of the cookies with coarse sugar (optional).
  8. Bake for 10-12 minutes, or until the edges are set and the centers are still slightly soft. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 3 days. For extra chocolate flavor, use dark cocoa powder.
