  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 2 large eggs

  • 0.5 cup buttermilk
For the Streusel Topping
  • 0.5 cup all-purpose flour
  • 0.5 cup brown sugar packed
  • 1 teaspoon ground cinnamon
  • 0.25 cup unsalted butter melted

Equipment

  • Muffin Tin
  • Mixing bowls
  • Whisk
  • Spatula
  • Measuring Cups and Spoons
  • Cooling Rack
  • Oven mitts

Method

  1. Step 1: Preheat your oven to 350°F (175°C) and prepare your muffin tin by lining it with paper liners or greasing it with cooking spray.
  2. Step 2: In a medium-sized mixing bowl, whisk together all-purpose flour, baking soda, ground ginger, ground cinnamon, ground nutmeg, ground cloves, and salt. Set aside.
  3. Step 3: In a large mixing bowl, cream together softened butter and brown sugar until light and fluffy, about 2-3 minutes.
  4. Step 4: Add eggs one at a time, mixing well after each addition. Stir in molasses and buttermilk until well combined.
  5. Step 5: Gradually add dry ingredients to the wet mixture, mixing until just combined.
  6. Step 6: In a separate bowl, prepare the streusel topping by combining all-purpose flour, brown sugar, ground cinnamon, and melted unsalted butter until crumbly.
  7. Step 7: Divide the muffin batter evenly among the prepared muffin cups, filling each about two-thirds full.
  8. Step 8: Generously sprinkle the streusel topping over each muffin.
  9. Step 9: Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  10. Step 10: Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store the muffins in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. They also freeze well for longer storage.
