- Step 1: Preheat your oven to 350°F (175°C) and prepare your muffin tin by lining it with paper liners or greasing it with cooking spray.
- Step 2: In a medium-sized mixing bowl, whisk together all-purpose flour, baking soda, ground ginger, ground cinnamon, ground nutmeg, ground cloves, and salt. Set aside.
- Step 3: In a large mixing bowl, cream together softened butter and brown sugar until light and fluffy, about 2-3 minutes.
- Step 4: Add eggs one at a time, mixing well after each addition. Stir in molasses and buttermilk until well combined.
- Step 5: Gradually add dry ingredients to the wet mixture, mixing until just combined.
- Step 6: In a separate bowl, prepare the streusel topping by combining all-purpose flour, brown sugar, ground cinnamon, and melted unsalted butter until crumbly.
- Step 7: Divide the muffin batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Step 8: Generously sprinkle the streusel topping over each muffin.
- Step 9: Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Step 10: Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
Store the muffins in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. They also freeze well for longer storage.
