  • 1 pint Cherry or grape tomatoes
  • 8 ounces Fresh mozzarella balls (bocconcini) Small size
  • 1 bunch Fresh basil leaves
  • 2 tablespoons Balsamic glaze Or balsamic vinegar reduced on the stovetop
  • 2 tablespoons Extra virgin olive oil
  • 1/4 teaspoon Salt or to taste
  • 1/4 teaspoon Freshly ground black pepper or to taste

Method
 

Instructions
  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. Thread one cherry tomato, one mozzarella ball, and one basil leaf onto each skewer. Repeat until all ingredients are used.
  3. In a small bowl, whisk together the olive oil, salt, and pepper.
  4. Arrange the skewers on a plate or platter.
  5. Drizzle the olive oil mixture generously over the skewers.
  6. Drizzle balsamic glaze over the skewers.
  7. Serve immediately or chill for later. These skewers are best served fresh.

Notes

For a variation, add a small cube of prosciutto or salami to each skewer for extra flavor. You can also grill the skewers for a warm appetizer.
