Method
 

  1. Step 1: Preheat your oven to 180°C (350°F).
  2. Step 2: In a large mixing bowl, cream the softened unsalted butter and granulated sugar until light and fluffy.
  3. Step 3: Add the large eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Step 4: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Step 5: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Step 6: Gently fold in the chopped rhubarb.
