  • 1 lb Boneless, skinless chicken breasts cut into 1-inch cubes
  • 1 tbsp Olive oil
  • 1/2 cup Onion chopped
  • 1 Green bell pepper chopped
  • 1 Red bell pepper chopped
  • 2 cloves Garlic minced
  • 1 tbsp Cajun seasoning adjust to taste
  • 1/2 tsp Paprika
  • 1/4 tsp Cayenne pepper optional, for extra heat
  • 1 can (10.75 oz) Cream of mushroom soup condensed
  • 1/2 cup Milk
  • 1/4 cup Heavy cream optional, for extra richness
  • 1 cup Cheddar cheese shredded
  • 16 oz Pasta penne, rotini, or your favorite shape
  • to Salt and pepper taste
  • Fresh parsley chopped, for garnish (optional)

Method
 

Instructions
  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add onion and bell peppers to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Stir in Cajun seasoning, paprika, and cayenne pepper (if using). Cook for 1 minute, stirring constantly.
  5. Add cream of mushroom soup, milk, and heavy cream (if using) to the skillet. Bring to a simmer, stirring constantly. Reduce heat to low and stir in cheddar cheese until melted and smooth.
  6. Add cooked chicken and pasta to the sauce. Stir to combine and heat through. Season with salt and pepper to taste.
  7. Garnish with fresh parsley, if desired, and serve immediately.

Notes

For a spicier dish, add more cayenne pepper or a pinch of red pepper flakes. You can also substitute other types of cheese, such as Monterey Jack or pepper jack.
