  • 1 pound Rotini pasta
  • 1 pint Cherry or grape tomatoes halved
  • 8 ounces Fresh mozzarella balls halved or quartered if large
  • 1/2 cup Fresh basil leaves roughly chopped
  • 1/4 cup Grated Parmesan cheese
  • 1/2 cup Olive oil
  • 1/4 cup Balsamic vinegar
  • 2 cloves Garlic minced
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper

Method
 

Instructions
  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. While pasta cooks, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper in a large bowl.
  3. Add the cooked pasta to the dressing and toss to coat.
  4. Gently fold in the halved tomatoes, mozzarella balls, and chopped basil.
  5. Stir in the Parmesan cheese.
  6. Taste and adjust seasonings as needed. Refrigerate for at least 30 minutes to allow flavors to meld.
  7. Serve chilled or at room temperature.

Notes

For a richer flavor, use a high-quality balsamic vinegar. You can also add other vegetables like bell peppers or cucumbers. Consider adding grilled chicken or shrimp for a heartier salad.
