Ingredients
  

Pasta and Vegetables
  • 8 ounces Rotini pasta
  • 1 large Cucumber peeled, seeded, and diced
  • 1/2 cup Red onion thinly sliced
  • 1/2 cup Cherry tomatoes halved
Cheese and Herbs
  • 1/2 cup Feta cheese crumbled
  • 1/4 cup Fresh dill chopped
  • 1/4 cup Fresh mint chopped
Dressing
  • 1/2 cup Plain Greek yogurt
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 clove Garlic minced
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper

Method
 

Instructions
  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. While the pasta cooks, prepare the vegetables: peel, seed, and dice the cucumber; thinly slice the red onion; and halve the cherry tomatoes.
  3. Chop the fresh dill and mint.
  4. In a large bowl, combine the cooked pasta, diced cucumber, red onion, halved tomatoes, crumbled feta cheese, dill, and mint.
  5. In a small bowl, whisk together the Greek yogurt, olive oil, lemon juice, minced garlic, salt, and pepper.
  6. Pour the dressing over the pasta and vegetable mixture. Gently toss to combine.
  7. Refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled.

Notes

For a spicier kick, add a pinch of red pepper flakes to the dressing. You can also substitute other herbs like parsley or chives for the dill and mint. Feel free to add other vegetables like bell peppers or zucchini.
