- In a medium bowl, combine the shredded cheddar cheese and softened cream cheese. Mix until just combined; avoid overmixing.
- Add the drained and chopped pimentos, mayonnaise, milk (or buttermilk), yellow mustard, Worcestershire sauce, garlic powder, and cayenne pepper (if using).
- Gently stir until creamy and well combined. Again, avoid overmixing.
- Season generously with salt and freshly ground black pepper to taste.
- Taste and adjust seasonings as needed. Add more mayonnaise for creaminess, or more mustard or Worcestershire sauce for bolder flavors.
- Serve immediately, or cover and refrigerate for at least 30 minutes to allow flavors to meld. Enjoy!
Notes
For a smoother pimento cheese, you can briefly pulse the mixture in a food processor. Consider adding a pinch of onion powder or smoked paprika for extra depth of flavor. This pimento cheese is delicious served with crackers, celery sticks, or used as a spread for sandwiches or burgers.
