  • 16 ounces Sharp Cheddar Cheese Shredded
  • 8 ounces Cream Cheese Softened
  • 4 ounces Pimentos Drained and chopped
  • 0.25 cup Mayonnaise
  • 2 tablespoons Milk or Buttermilk
  • 1 tablespoon Yellow Mustard
  • 1 teaspoon Worcestershire Sauce
  • 1 teaspoon Garlic Powder
  • 0.25 teaspoon Cayenne Pepper Optional
  • To taste Salt and Pepper Freshly ground

Instructions
  1. In a medium bowl, combine the shredded cheddar cheese and softened cream cheese. Mix until just combined; avoid overmixing.
  2. Add the drained and chopped pimentos, mayonnaise, milk (or buttermilk), yellow mustard, Worcestershire sauce, garlic powder, and cayenne pepper (if using).
  3. Gently stir until creamy and well combined. Again, avoid overmixing.
  4. Season generously with salt and freshly ground black pepper to taste.
  5. Taste and adjust seasonings as needed. Add more mayonnaise for creaminess, or more mustard or Worcestershire sauce for bolder flavors.
  6. Serve immediately, or cover and refrigerate for at least 30 minutes to allow flavors to meld. Enjoy!

Notes

For a smoother pimento cheese, you can briefly pulse the mixture in a food processor. Consider adding a pinch of onion powder or smoked paprika for extra depth of flavor. This pimento cheese is delicious served with crackers, celery sticks, or used as a spread for sandwiches or burgers.
