- Step 1: Begin by bringing a large pot of salted water to a boil. Add the 8 ounces of fusilli pasta and cook according to the package instructions, typically around 8-10 minutes, until al dente. Drain the pasta in a colander and rinse it under cold water to stop the cooking process and cool it down.
- Step 2: While the pasta is cooking, prepare the other ingredients. Cook the 6 slices of bacon until crispy, then crumble them into bite-sized pieces. Next, halve the 1 cup of cherry tomatoes and chop 1 cup of romaine lettuce into small pieces. Set these ingredients aside.
- Step 3: In a separate mixing bowl, combine the 1/2 cup of mayonnaise, 1/4 cup of sour cream, 1 tablespoon of lemon juice, and 1 teaspoon of garlic powder. Whisk the ingredients until smooth and creamy. Add salt and pepper to taste.
- Step 4: In your large mixing bowl, combine the cooled pasta, crumbled bacon, halved cherry tomatoes, and chopped romaine lettuce. Pour the dressing over the mixture and toss gently until everything is evenly coated.
- Step 5: Finally, garnish your salad with freshly chopped parsley. Serve immediately, or cover and refrigerate for at least 30 minutes to allow the flavors to meld. You can enjoy this salad chilled or at room temperature.
Notes
For extra flavor, consider adding a splash of hot sauce or a sprinkle of red pepper flakes to the dressing. You can also use pre-cooked bacon or bacon bits to save time. For a healthier twist, substitute Greek yogurt for half of the mayonnaise in the dressing.
