  • 1 lb carrots peeled and cut into 2-inch pieces
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley chopped (for garnish)

Method
 

  1. Step 1: Preheat your oven to 425°F (220°C).
  2. Step 2: In a large pot, bring salted water to a boil. Add the carrot pieces and boil for 10-12 minutes until fork-tender. Drain and let cool slightly.
