- Step 1: Preheat your oven to 425°F (220°C).
- Step 2: In a large pot, bring salted water to a boil. Add the carrot pieces and boil for 10-12 minutes until fork-tender. Drain and let cool slightly.
- Step 3: Line a baking sheet with parchment paper. Place the boiled carrots on the sheet and smash each piece until flattened.
- Step 4: Drizzle olive oil over the smashed carrots. Mix garlic powder, paprika, salt, and black pepper in a bowl, then sprinkle over the carrots. Toss to coat.
- Step 5: Bake in the preheated oven for 20-25 minutes until crispy and golden brown.
- Step 6: Remove from the oven, garnish with parsley, and serve warm.
Notes
Store leftover carrot bites in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for a few minutes to regain crispness.
