- Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a large bowl, beat the softened cream cheese and sweetened condensed milk together until smooth and creamy using a hand mixer.
- In a microwave-safe bowl, combine the chocolate chips and melted butter. Microwave in 30-second intervals, stirring after each, until melted and smooth.
- Pour the melted chocolate mixture into the cream cheese mixture. Stir gently until well combined.
- Stir in the vanilla extract. If using, sprinkle graham cracker crumbs evenly over the top.
- Pour the fudge mixture into the prepared pan. Refrigerate for at least 4 hours, or preferably overnight, to firm up.
- Once firm, lift the fudge out of the pan using the parchment paper overhang. Cut into squares and serve.
Notes
For a richer flavor, use dark chocolate chips. You can also add a pinch of salt to enhance the sweetness. Store leftover fudge in an airtight container in the refrigerator for up to a week.
