- Place cubed sweet potatoes in your slow cooker.
- In a medium bowl, whisk together the melted butter, brown sugar, milk, eggs, vanilla extract, cinnamon, nutmeg, and salt.
- Pour the wet ingredients over the sweet potatoes in the crock pot.
- Cook on low for 6-8 hours, or on high for 3-4 hours, or until the sweet potatoes are very tender.
- Remove from the crock pot and mash with a potato masher or electric mixer until smooth. Stir in nuts, if using.
- Transfer the mashed sweet potatoes to a greased 9x13 inch baking dish.
- Bake at 350°F (175°C) for 20-25 minutes, or until heated through and lightly browned on top. (Optional)
- Serve warm.
Notes
For a richer flavor, use maple syrup instead of some of the brown sugar. You can also add a sprinkle of cinnamon on top before baking.
