Ingredients

Main Ingredients
  • 1 bag mini pretzel twists or snaps 10 oz bag; about 55-60 pretzels. Lattice or square snaps work best.
  • 1 bag Rolo chewy caramels in milk chocolate candies 12 oz bag; yields about 55-60 unwrapped pieces.
  • 55-60 pieces pecan halves Or substitute with M&M's candies for a colorful alternative.
  • 1 sheet Parchment Paper Essential for preventing sticky caramel cleanup.

Equipment

  • Large Baking Sheet
  • Parchment Paper or Silicone Baking Mat

Method

Preparation and Assembly
  1. Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper or a silicone baking mat. This step is crucial for easy removal.
  2. Unwrap all the Rolo candies (you will need approximately 55 to 60 individual pieces) and set them aside.
  3. Place the pretzels onto the prepared baking sheet, ensuring they are lying flat and spaced slightly apart (about half an inch between each one).
  4. Place one unwrapped Rolo candy directly on top of the center of each pretzel.
Baking and Cooling
  1. Bake for approximately 3 to 5 minutes. Watch the candies closely; they are ready when they look glossy and soft, but have not yet completely melted out of their shape. They should be just soft enough to easily press down.
  2. Remove the baking sheet from the oven. Immediately, gently press one pecan half (or one M&M candy) onto the top of the softened Rolo candy, forcing the melted chocolate and caramel to spread slightly into the crevices of the pretzel.
  3. Allow the pretzel bites to cool and harden completely before serving. This takes 1 to 2 hours at room temperature, or transfer the baking sheet to the refrigerator or freezer for 15 to 20 minutes for faster setting.
  4. Once completely cool and hardened, peel the Rolo Pretzels from the parchment paper. Store the finished treats in an airtight container at room temperature for up to one week, or in the refrigerator for two to three weeks.

Notes

Ensure you do not overbake the Rolo candies, as burnt chocolate will seize and stick aggressively to the pretzels. If using M&M's, press them firmly to ensure they adhere to the caramel before it cools. This recipe doubles easily, but use multiple baking sheets to avoid overcrowding.
