  • 3 Ripe Peaches peeled, pitted, and diced
  • 0.5 cup Red Onion finely chopped
  • 1 Jalapeño Pepper seeded and minced (optional, or use less for less heat)
  • 0.5 cup Cilantro chopped
  • 0.25 cup Lime Juice
  • 2 tablespoons Sugar (or to taste)
  • 0.25 teaspoon Salt (or to taste)
  • 1 teaspoon Fresh Lime Zest optional, adds extra citrus flavor

  • In a medium bowl, gently combine the diced peaches, red onion, jalapeño (if using), cilantro, and lime zest (if using).
  • In a small bowl, whisk together the lime juice, sugar, and salt until the sugar is completely dissolved.
  • Pour the lime juice mixture over the peach mixture and stir gently to combine. Be careful not to overmix, as the peaches may become mushy.
  • Taste and adjust seasonings as needed, adding more sugar, lime juice, salt, or jalapeño to your preference.
  • Let the salsa sit for at least 15 minutes to allow the flavors to meld. This step is optional, but recommended.
  • Serve immediately with tortilla chips, grilled chicken or fish, or as a topping for tacos or burritos.
  • For best results, chill the salsa for 30 minutes before serving to enhance the flavors and create a refreshing contrast.

Notes

For a sweeter salsa, use white peaches. For a spicier salsa, add more jalapeño or a pinch of cayenne pepper. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
