  • 3 Ripe Peaches peeled, pitted, and diced
  • 0.5 cup Red Onion finely chopped
  • 1 Jalapeño Pepper seeded and minced (optional, or use less for less heat)
  • 0.5 cup Cilantro chopped
  • 0.25 cup Lime Juice
  • 2 tablespoons Sugar (or to taste)
  • 0.25 teaspoon Salt (or to taste)
  • 1 teaspoon Fresh Lime Zest optional, adds extra citrus flavor

Instructions
  1. In a medium bowl, gently combine the diced peaches, red onion, jalapeño (if using), cilantro, and lime zest (if using).
  2. In a small bowl, whisk together the lime juice, sugar, and salt until the sugar is completely dissolved.
  3. Pour the lime juice mixture over the peach mixture and stir gently to combine. Be careful not to overmix, as the peaches may become mushy.
  4. Taste and adjust seasonings as needed, adding more sugar, lime juice, salt, or jalapeño to your preference.
  5. Let the salsa sit for at least 15 minutes to allow the flavors to meld. This step is optional, but recommended.
  6. Serve immediately with tortilla chips, grilled chicken or fish, or as a topping for tacos or burritos.
  7. For best results, chill the salsa for 30 minutes before serving to enhance the flavors and create a refreshing contrast.

Notes

For a sweeter salsa, use white peaches. For a spicier salsa, add more jalapeño or a pinch of cayenne pepper. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
