Ingredients

For the Salad
  • 1 small head green cabbage shredded
  • 1 cup cherry tomatoes halved
  • 1 cup corn canned or frozen (thawed)
  • 1 cup cooked black beans rinsed and drained
  • 1 red bell pepper diced
  • 1 cup shredded cheddar cheese
  • 1 cup Fritos corn chips
  • 0.5 cup mayonnaise
  • 0.5 cup sour cream
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • Salt and pepper to taste

Equipment

  • Large Mixing Bowl
  • Whisk
  • Cutting board
  • Chef's Knife
  • Measuring Cups and Spoons
  • Spatula or salad tongs

Method

  1. Step 1: Start by shredding the cabbage into thin strips and placing it in your large mixing bowl. Add the halved cherry tomatoes, corn, rinsed black beans, and diced red bell pepper.
  2. Step 2: In a separate bowl, combine the mayonnaise, sour cream, lime juice, chili powder, and a pinch of salt and pepper. Use a whisk to blend these ingredients until smooth and creamy.
  3. Step 3: Pour the dressing over the salad mixture in the mixing bowl. Gently toss everything together with a spatula or salad tongs until all the ingredients are coated in the dressing.
  4. Step 4: Just before serving, add the Fritos corn chips to the salad. Toss them lightly into the salad so they’re evenly distributed.
  5. Step 5: Your Frito Cowboy Cabbage Salad is now ready to be served!

Notes

Consider keeping the Fritos separate until just before serving to ensure they stay crispy and maintain their delightful crunch!
