  • 1.5 lbs Beef Sirloin Steak Cut into 1-inch cubes
  • 2 lbs Small Red Potatoes Halved or quartered if large
  • 0.5 cup Unsalted Butter (1 stick)
  • 6 cloves Garlic Minced
  • 0.25 cup Fresh Parsley Chopped
  • 2 tablespoons Olive Oil
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper

  • Preheat oven to 400°F (200°C). Toss potatoes with 1 tablespoon olive oil, salt, and pepper. Spread in a single layer on a large baking sheet.
  • In a large skillet over medium-high heat, heat remaining olive oil. Add beef cubes and sear on all sides until browned, about 3-4 minutes per side. Remove beef from skillet and set aside.
  • In the same skillet, melt butter over medium heat. Add minced garlic and thyme; cook for 1-2 minutes, or until fragrant, being careful not to burn the garlic.
  • Add the seared beef cubes to the skillet with the garlic butter. Toss to coat.
  • Transfer the beef to the baking sheet with the potatoes.
  • Bake for 20-25 minutes, or until the potatoes are tender and the beef is cooked to your desired internal temperature (use a meat thermometer). Internal temperature should reach at least 145°F (63°C) for medium-rare beef.
  • Stir in chopped parsley before serving.

Notes

For extra flavor, marinate the beef cubes in a mixture of garlic, thyme, and olive oil for at least 30 minutes before cooking. You can also add other vegetables like carrots or broccoli to the baking sheet.
