- Step 1: In a large pot, melt the butter over medium heat. Add the chopped onion, sliced carrots, and chopped celery. Sauté the vegetables for about 5-7 minutes, stirring occasionally until they are tender and fragrant.
- Step 2: Once the vegetables are tender, add the diced potatoes and cooked ham to the pot. Pour in the chicken broth, ensuring that all the ingredients are covered. Bring the mixture to a boil over high heat.
- Step 3: Once boiling, reduce the heat to low and let the soup simmer for 15-20 minutes until the potatoes are cooked through and tender.
- Step 4: After the potatoes are cooked, stir in the milk, garlic powder, thyme, salt, and pepper. Heat the soup through, but avoid boiling to prevent curdling.
- Step 5: Ladle the soup into bowls and garnish with chopped parsley if desired. Serve hot and enjoy!
Notes
For a thicker soup, consider mashing some of the potatoes with a potato masher before adding the milk. If you prefer a smokier flavor, try using smoked ham or adding a dash of liquid smoke.
