Ingredients

For the Honey-Roasted Peanut Buckeye Bars
  • 1 cup honey-roasted peanuts finely chopped
  • 1 cup creamy peanut butter
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • 1/2 cup chocolate chips

Equipment

  • Large Mixing Bowl
  • Spatula or wooden spoon
  • 8x8 inch Baking Dish
  • Parchment paper
  • Microwave-safe bowl or double boiler
  • Refrigerator
  • Sharp knife

Method

  1. Step 1: In a large mixing bowl, add the finely chopped honey-roasted peanuts, creamy peanut butter, unsweetened cocoa powder, honey, and vanilla extract. Use a spatula or wooden spoon to mix until all the ingredients are well combined.
  2. Step 2: Stir in the rolled oats until evenly incorporated into the mixture.
  3. Step 3: Line your 8x8-inch baking dish with parchment paper. Press the peanut butter mixture firmly into the bottom of the dish, ensuring it is evenly spread and compacted.
  4. Step 4: In a microwave-safe bowl, add the chocolate chips and microwave in 30-second intervals, stirring in between, until completely melted and smooth.
  5. Step 5: Pour the melted chocolate over the oat mixture in the baking dish. Use a spatula to spread it evenly, covering the entire surface of the bars.
  6. Step 6: Place the baking dish in the refrigerator and allow the bars to set for at least 1 hour.
  7. Step 7: Once set, lift the bars out of the dish using the parchment paper overhang. Cut into squares or rectangles with a sharp knife.
  8. Step 8: Store the bars in an airtight container in the refrigerator for up to a week.

Notes

These bars can be frozen by wrapping them tightly and placing them in an airtight container for up to 3 months.
