Ingredients
  

Wet Ingredients

  • 1/2 cup Unsalted Butter, melted
  • 3/4 cup Granulated Sugar
  • 2 Large Eggs
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Milk

Dry Ingredients

  • 1 1/2 cups All-purpose Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 2 cups Peaches, peeled and diced

Crumble Topping

  • 1/2 cup Flour
  • 1/4 cup Brown Sugar
  • 1/4 cup Cold Butter, cubed

  • Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  • In a large bowl, cream together the melted butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract and milk.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
  • Gently fold in the diced peaches.
  • For the crumble topping: Combine flour, brown sugar, and cold butter in a small bowl. Use your fingers to rub the butter into the dry ingredients until it resembles coarse crumbs.
  • Fill each muffin liner about 2/3 full with batter. Sprinkle the crumble topping evenly over the muffins.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Notes

For a sweeter muffin, add 1/4 cup more sugar. You can also use other fruits like blueberries or raspberries instead of peaches.
