  • 4 Peaches ripe, sliced
  • 4 slices Bacon cooked and crumbled
  • 4 ounces Goat Cheese crumbled
  • 5 ounces Arugula
  • 1/4 cup Red Onion thinly sliced
  • 1/4 cup Walnuts toasted and chopped
  • 1/4 cup Balsamic Vinaigrette store-bought or homemade

  • Preheat oven to 400°F (200°C). Arrange bacon slices on a baking sheet and bake for 12-15 minutes, or until crispy.
  • While bacon is cooking, wash and slice the peaches.
  • Remove bacon from oven and crumble.
  • In a large bowl, combine arugula, red onion, and walnuts.
  • Add sliced peaches, crumbled bacon, and goat cheese to the bowl.
  • Drizzle with balsamic vinaigrette and gently toss to combine.
  • Serve immediately or chill for later.

Notes

For a sweeter salad, add a drizzle of honey or maple syrup to the vinaigrette. You can also substitute pecans or other nuts for the walnuts.
