- Step 1: Preheat your oven to 400°F (200°C).
- Step 2: Wash and scrub the baby potatoes thoroughly under running water and cut each potato in half.
- Step 3: In a large bowl, combine olive oil, cocoa powder, brown sugar, vanilla extract, and salt. Mix well until it forms a smooth paste.
- Step 4: Add the halved potatoes to the bowl with the chocolate mixture and toss gently until they are evenly coated.
- Step 5: Spread the coated potatoes onto a baking sheet in a single layer.
- Step 6: Bake for 25-30 minutes, or until the potatoes are tender and cooked through.
- Step 7: Once the potatoes are done, sprinkle mini marshmallows and chopped pecans (if using) on top.
- Step 8: Return to the oven for an additional 5 minutes, or until the marshmallows are golden brown.
- Step 9: Serve warm, optionally topped with whipped cream.
