  • 1/2 cup mini marshmallows for topping

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: Wash and scrub the baby potatoes thoroughly under running water and cut each potato in half.
  3. Step 3: In a large bowl, combine olive oil, cocoa powder, brown sugar, vanilla extract, and salt. Mix well until it forms a smooth paste.
  4. Step 4: Add the halved potatoes to the bowl with the chocolate mixture and toss gently until they are evenly coated.
  5. Step 5: Spread the coated potatoes onto a baking sheet in a single layer.
  6. Step 6: Bake for 25-30 minutes, or until the potatoes are tender and cooked through.
  7. Step 7: Once the potatoes are done, sprinkle mini marshmallows and chopped pecans (if using) on top.
