- Step 1: Preheat the oven to 350°F (175°C) and grease your 9x5-inch loaf pan.
- Step 2: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Step 3: In a large bowl, cream the softened butter and brown sugar together until light and fluffy.
- Step 4: Beat in the eggs one at a time, then stir in the vanilla extract.
- Step 5: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
- Step 6: Fold in the grated zucchini and chopped nuts, if using.
- Step 7: Pour the batter into the prepared loaf pan and smooth the top.
- Step 8: Bake for 50-60 minutes, checking for doneness with a toothpick.
- Step 9: Cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Notes
Make it healthier by substituting some of the all-purpose flour with whole wheat flour or almond flour. You can also add chocolate chips or nuts for variation.
