  • 1 cup Rolled Oats (not instant)
  • 1/2 cup Creamy Peanut Butter
  • 1/4 cup Honey or Maple Syrup
  • 1/4 cup Milk (any kind, or water)
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Chocolate Chips Optional
  • 1/4 cup Chopped Nuts (peanuts, almonds, or pecans) Optional
  • 1/4 teaspoon Sea Salt Optional, for a salty-sweet balance

Method
 

Instructions
  1. In a medium bowl, combine rolled oats, peanut butter, honey (or maple syrup), milk (or water), vanilla extract, and salt (if using).
  2. Mix thoroughly until all ingredients are well combined and a dough forms. If the mixture is too dry, add a tablespoon of milk at a time until it comes together. If it's too wet, add a tablespoon of oats.
  3. Stir in chocolate chips and/or chopped nuts, if desired.
  4. Roll the mixture into small balls (about 1 inch in diameter).
  5. Place the balls on a plate or baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to allow them to firm up. For firmer balls, refrigerate for longer (up to 2 hours).
  7. Enjoy! Store in an airtight container in the refrigerator for up to a week.

Notes

For a richer flavor, use dark honey or maple syrup. You can also experiment with different types of nuts and dried fruits. If you want a sweeter treat, add more honey or maple syrup, one tablespoon at a time, to reach your desired sweetness.
