- Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish.
- In a large bowl, combine pecans, granulated sugar, brown sugar, flour, and salt for the filling. Stir in vanilla and melted butter.
- Whisk in eggs and corn syrup until well combined. Pour mixture into the prepared baking dish.
- In a separate bowl, whisk together flour, sugar, baking powder, baking soda, and salt for the topping.
- Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Stir in buttermilk until just combined. Do not overmix.
- Drop spoonfuls of the cobbler topping evenly over the pecan filling.
- Bake for 40-45 minutes, or until the topping is golden brown and the filling is bubbly.
- Let cool slightly before serving. Enjoy warm!
Notes
For a richer flavor, use dark corn syrup. You can also add a pinch of cinnamon or nutmeg to the filling. Serve warm with a scoop of vanilla ice cream.
