- Melt the chocolate chips: In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring until smooth. Alternatively, melt over a double boiler.
- Combine wet ingredients: In a separate bowl, combine the melted chocolate, peanut butter, softened butter, and vanilla extract. Mix until completely smooth and creamy.
- Add powdered sugar to wet ingredients: Gradually add the 1/2 cup of powdered sugar to the chocolate mixture, mixing until well combined.
- Incorporate cereal: Gently fold in the Chex cereal until each piece is evenly coated with the chocolate mixture.
- Chill: Cover the bowl and refrigerate for at least 30 minutes, or until the mixture is firm enough to roll into balls.
- Roll into balls: Once chilled, roll the mixture into 1-inch balls. Place them on a baking sheet lined with parchment paper.
- Coat in powdered sugar: Place the remaining 1/2 cup of powdered sugar in a shallow bowl. Roll each truffle ball in the powdered sugar until completely coated.
- Enjoy! Serve immediately or store in an airtight container in the refrigerator for up to a week.
Notes
For a richer flavor, use dark chocolate chips. You can also add chopped nuts or sprinkles to the truffles for extra texture and flavor. Consider using different types of Chex cereal for variety.
