  • 0.5 cup Feta Cheese crumbled (optional)

  • 0.25 cup Red Wine Vinegar
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper

  • In a large bowl, combine the sliced cucumbers, halved cherry tomatoes, and red onion (if using).
  • In a small bowl, whisk together the red wine vinegar, olive oil, chopped dill, salt, and pepper.
  • Pour the dressing over the cucumber and tomato mixture.
  • Gently toss to combine, ensuring all vegetables are evenly coated with the dressing.
  • If using, gently stir in the crumbled feta cheese.
  • Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. This step is optional but recommended.
  • Serve chilled and enjoy!

Notes

For a creamier salad, add a dollop of plain Greek yogurt or sour cream to the dressing. You can also add other vegetables such as bell peppers or carrots. Feel free to adjust the amount of salt and pepper to your taste.
