- Step 1: Preheat your oven to 350°F (175°C). Grease your 9x9-inch baking dish with butter or cooking spray.
- Step 2: In a mixing bowl, combine 1 cup of all-purpose flour, 1/2 cup of softened unsalted butter, 1/4 cup of granulated sugar, and 1/2 teaspoon of salt. Mix until they resemble coarse crumbs. Press this mixture firmly into the bottom of the prepared baking dish.
- Step 3: Bake the crust for 10-12 minutes, or until lightly golden. Remove and allow to cool slightly.
- Step 4: In another bowl, combine 2 cups of chopped rhubarb, 1 cup of granulated sugar, 1/4 cup of all-purpose flour, and 1/4 teaspoon of salt. Mix well and set aside.
- Step 5: In a separate bowl, beat the softened cream cheese with an electric mixer until smooth. Add 1 egg and 1/2 teaspoon of vanilla extract, mixing until creamy.
- Step 6: Spread the cream cheese mixture over the cooled crust, then layer the rhubarb mixture on top.
- Step 7: Bake for an additional 30-35 minutes, until the rhubarb is tender and the filling is set. If the top begins to brown, cover loosely with aluminum foil.
- Step 8: Allow to cool completely in the baking dish. Cut into squares or bars and serve.
Notes
These bars can be served chilled or at room temperature. Top with whipped cream or ice cream for an extra treat!
