- Step 1: Preheat the oven to 400°F (200°C).
- Step 2: Cut the top off the garlic head to expose the cloves. Wrap in aluminum foil.
- Step 3: Roast the wrapped garlic in the oven for 30-35 minutes until soft and caramelized.
- Step 4: Allow the garlic to cool slightly, then squeeze out the cloves into a mixing bowl.
- Step 5: Add sour cream, horseradish, lemon juice, salt, and pepper to the bowl. Mix until smooth.
- Step 6: Taste and adjust seasoning as necessary before serving.
- Step 7: Serve chilled or at room temperature, garnished with chopped chives if desired.
