  • 1 head garlic for roasting
  • 1 cup sour cream the creamy base for the sauce
  • 2 tbsp prepared horseradish adds a spicy kick
  • 1 tbsp lemon juice for acidity
  • Salt and pepper to taste
  • Fresh chives, chopped (for garnish, optional)

Method
 

  1. Step 1: Preheat the oven to 400°F (200°C).
  2. Step 2: Cut the top off the garlic head to expose the cloves. Wrap in aluminum foil.
  3. Step 3: Roast the wrapped garlic in the oven for 30-35 minutes until soft and caramelized.
  4. Step 4: Allow the garlic to cool slightly, then squeeze out the cloves into a mixing bowl.
  5. Step 5: Add sour cream, horseradish, lemon juice, salt, and pepper to the bowl. Mix until smooth.
  6. Step 6: Taste and adjust seasoning as necessary before serving.
