  • 1 lb 1 lb flank steak Trimmed of excess fat
  • 1 1 large bell pepper (red) sliced into strips
  • 1 1 large bell pepper (green) sliced into strips
  • 1 1 large onion sliced into strips
  • 2 tbsp 2 tbsp olive oil
  • 1 tbsp 1 tbsp chili powder
  • 1 tsp 1 tsp cumin
  • 0.5 tsp 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 8-10 Flour tortillas For serving
  • Toppings of your choice (sour cream, guacamole, salsa)

  • Preheat oven to 400°F (200°C).
  • In a large bowl, toss the sliced bell peppers and onion with 1 tbsp olive oil, salt, and pepper.
  • In a separate bowl, combine the remaining olive oil, chili powder, cumin, and garlic powder.
  • Add the steak to the spice mixture and rub it in thoroughly. Season with salt and pepper.
  • Spread the seasoned vegetables in a single layer on a large baking sheet.
  • Place the steak on top of the vegetables.
  • Bake for 25-30 minutes, or until the steak is cooked to your desired doneness and the vegetables are tender.
  • Remove from the oven, slice the steak against the grain, and serve immediately with warm tortillas and your favorite toppings.

Notes

For extra flavor, marinate the steak for at least 30 minutes before cooking. You can also add other vegetables, such as mushrooms or zucchini.
