- Step 1: Preheat your oven to 350°F (175°C) and prepare your muffin tin with paper liners or grease it with non-stick spray.
- Step 2: In a medium bowl, whisk together the flour, baking soda, spices, and salt.
- Step 3: In a large bowl, beat the softened butter and brown sugar together until light and fluffy.
- Step 4: Add the eggs one at a time, mixing well after each addition.
- Step 5: Stir in the molasses and buttermilk until fully combined.
- Step 6: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Step 7: Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Step 8: Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Step 9: Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
- Step 10: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over the cooled muffins.
Notes
You can make these muffins ahead of time and store them in an airtight container for up to three days. They also freeze well!
