- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg, molasses, and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, allspice, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Roll dough into 1-inch balls and place them onto the prepared baking sheets, leaving some space between each cookie.
- Sprinkle with coarse sugar, if desired.
- Bake for 10-12 minutes, or until the edges are lightly golden brown. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week. For extra chewy cookies, slightly underbake them. Feel free to adjust the spices to your liking.
