Crust Ingredients

  • 1 ½ cups All-purpose flour
  • ½ cup Granulated sugar
  • ½ cup Unsalted butter softened
  • 1 Egg
  • 1 teaspoon Vanilla extract

Frosting Ingredients

  • 8 ounces Cream cheese softened
  • 3 cups Powdered sugar
  • 1 teaspoon Vanilla extract

Topping Ingredients

  • 2 cups Assorted fresh fruits e.g., strawberries, blueberries, kiwi, mango

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter and sugar until light and fluffy.
  • Beat in the egg and vanilla extract. Gradually add the flour, mixing until just combined. Do not overmix.
  • Roll out the dough on a lightly floured surface to about 12 inches in diameter. Transfer to the prepared baking sheet.
  • Bake for 12-15 minutes, or until the edges are lightly golden brown. Let cool completely on a wire rack.
  • While the crust cools, prepare the frosting. In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • Spread the frosting evenly over the cooled crust. Arrange the fresh fruit on top of the frosting.
  • Serve immediately or chill for later.

Notes

For a richer flavor, use brown sugar instead of granulated sugar in the crust. Feel free to experiment with different types of fruit – peaches, raspberries, and blackberries also work well.
