- Finely chop the red onion and cilantro. Seed and mince the jalapeños.
- In a medium bowl, combine the cranberries, red onion, orange juice, cilantro, jalapeños, honey (or maple syrup), lime juice, cumin, salt, and pepper.
- Gently stir to thoroughly combine all ingredients.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. The longer it sits (up to 2 days), the better it tastes!
- Taste and adjust seasonings as needed before serving. Add more honey for extra sweetness or jalapeños for more heat.
- Serve chilled with tortilla chips, pork tenderloin, grilled chicken, or your favorite protein.
Notes
For a smoother salsa, you can pulse the ingredients briefly in a food processor before refrigerating. Consider adding a pinch of cayenne pepper for extra kick.
