Ingredients

For the Taco Pasta Salad
  • 8 oz rotini pasta
  • 1 cup cherry tomatoes halved
  • 1 cup black beans drained and rinsed
  • 1 cup corn drained
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell pepper
  • 1/2 cup red onion diced
  • 1/4 cup fresh cilantro chopped
  • 1 packet taco seasoning
  • 1/2 cup ranch dressing
  • 2 cups Doritos crushed

Equipment

  • Large pot
  • Colander
  • Mixing bowls
  • Measuring Cups and Spoons
  • Wooden spoon or spatula
  • Knife and Cutting Board
  • Plastic Wrap or Airtight Container

Method

  1. Step 1: Begin by bringing a large pot of salted water to a boil. Once the water is bubbling, add 8 oz of rotini pasta and cook according to the package instructions, usually around 8-10 minutes. Stir occasionally to prevent sticking. Once cooked, drain the pasta in a colander and rinse under cold water to cool it down.
  2. Step 2: While the pasta is cooling, take this opportunity to prepare your vegetables. In a large mixing bowl, combine cherry tomatoes, black beans, corn, diced bell pepper, red onion, and fresh cilantro. Mix these ingredients together gently to incorporate all the flavors.
  3. Step 3: In a separate bowl, combine taco seasoning with ranch dressing. Stir until well blended.
  4. Step 4: Pour the cooled pasta into the large bowl with the vegetables and drizzle the dressing mixture over the top. Using a wooden spoon or spatula, gently toss all the ingredients until they are evenly coated with the dressing.
  5. Step 5: Just before serving, fold in 2 cups of crushed Doritos to add an irresistible crunch to your salad.
  6. Step 6: Your Taco Pasta Salad with Doritos Crunch is now ready to be served! Enjoy it immediately for the best crunch, or if you prefer, refrigerate it for up to an hour to allow the flavors to meld.

Notes

Leftovers can be stored in the refrigerator for up to 2-3 days. It's best to add the Doritos just before serving to keep them crunchy.
