- Step 1: Begin by bringing a large pot of salted water to a boil. Once the water is bubbling, add 8 oz of rotini pasta and cook according to the package instructions, usually around 8-10 minutes. Stir occasionally to prevent sticking. Once cooked, drain the pasta in a colander and rinse under cold water to cool it down.
- Step 2: While the pasta is cooling, take this opportunity to prepare your vegetables. In a large mixing bowl, combine cherry tomatoes, black beans, corn, diced bell pepper, red onion, and fresh cilantro. Mix these ingredients together gently to incorporate all the flavors.
