For the Pasta Salad
  • 8 oz pasta choose your favorite type – rotini, penne, or farfalle
  • 1/2 cup cherry tomatoes halved
  • 1/2 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
  • 1/4 cup feta cheese optional, crumbled
For the Dressing
  • 1/4 cup olive oil for dressing
  • 2 tbsp Dijon mustard
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp honey

Method
 

  1. Step 1: Begin by bringing a large pot of salted water to a boil. Once boiling, add your 8 ounces of chosen pasta. Cook according to the package instructions, usually around 8-10 minutes or until al dente.
  2. Step 2: Once cooked, drain the pasta in a colander and rinse it under cold water. This stops the cooking process and cools the pasta.
  3. Step 3: While the pasta is cooling, take your knife and cutting board to prepare the vegetables. Halve the cherry tomatoes, dice the cucumber, and finely chop the red onion. Finally, chop the fresh parsley.
  4. Step 4: In a large mixing bowl, combine the cooled pasta with the halved cherry tomatoes, diced cucumber, chopped red onion, and parsley. Gently toss the ingredients together to mix them evenly.
  5. Step 5: In a small bowl, whisk together the olive oil, Dijon mustard, lemon juice, honey, salt, and pepper until well combined.
  6. Step 6: Pour the dressing over the salad mixture and toss everything together using a spatula or spoon until all the ingredients are evenly coated with the dressing.
  7. Step 7: If you’re using feta cheese, sprinkle it over the top of the salad and gently fold it in.
  8. Step 8: For the best flavor, chill the salad in the refrigerator for at least 30 minutes before serving.
