  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 8 oz mixed wild mushrooms sliced
  • 1 tsp fresh thyme leaves
  • 4 cups vegetable broth
  • 1 cup Parmesan cheese grated

Method
 

  1. Step 1: In a large skillet, add olive oil and heat over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  2. Step 2: Stir in minced garlic and sliced mushrooms. Cook for approximately 7-10 minutes, until mushrooms are tender and liquid has evaporated.
  3. Step 3: Add fresh thyme leaves and orzo to the skillet. Stir well to combine.
  4. Step 4: Pour in vegetable broth and bring to a boil. Reduce heat to simmer and cook for about 10-12 minutes, stirring occasionally.
  5. Step 5: Remove from heat and stir in grated Parmesan cheese. Season with salt and pepper to taste.
  6. Step 6: Serve warm, garnished with fresh thyme sprigs.

Notes

This dish can be made ahead of time and reheated. Add a splash of broth if it becomes too dry.
